San Jose: ‘Iron Chef’ Morimoto and his fans create 140-foot-long sushi roll

“Iron Chef” Masaharu Morimoto may have postponed the opening of his Momosan ramen and sake restaurant in San Jose — it will be his first in California — but that didn’t keep him from coming to town Friday night to celebrate the upcoming launch at Santana Row with a few hundred fans and local business leaders.
After breaking open a ceremonial sake barrel, he headed over to the makeshift “Kitchen Stadium” outside, yelled, “The secret ingredient is … tuna!” and sat down to carve a 200-pound sushi-grade fish into strips, as dozens of cellphone cameras captured the action.
He then enlisted the crowd with a hearty “Allez Cuisine!” to head over to a block-long strip of seaweed on a bamboo mat and help him make a 140-foot-long maki roll. Donning kitchen gloves, the eager wannabe sushi chefs rolled as directed, stepping aside only when the master decided his touch was needed. The sushi was carved into hundreds of pieces, plated with wasabi and served to celebrants.
Momosan Santana Row is expected to open in late September.
